Homemade Cheese-its

Introduction:

These homemade cheese-its are so good. Everyone really loved it, so I couldn't wait to share this new recipe with all of you. It is super easy to make, but still a lot of fun. They kind of remind of Christmas when I make sugar cookies, but they are perfect for any time of the year. I hope that you enjoy making this recipe as much as I do. (Plus, let me know if you actually do make this recipe. I would like to know how it turned out.)

Recipe:

Ingredients:

1 cup of flour 
7-9 ounces of grated cheddar cheese
½ teaspoons of salt
4 tablespoons of butter (½ of a stick of butter
2-4 tablespoons of water (You can use more or less water depending on how dry your dough is.)

Directions: 

  1. Grate all of your cheese. You can also buy pre shredded cheese to make things easier if you want.
  2. Use a knife to cut your butter into little pieces.
  3. Put everything except for your water into your food processer. Pulse until their are only little crumbs. Put in water one tablespoon at a time. Only put enough so that a dough is formed. 
  4. Once the dough is formed, take out the dough and knead it enough that a ball forms. 
  5. Wrap your dough ball in plastic wrap. Put your dough in the fridge for 20 minutes and up to 24 hours. 
  6. Take your dough out and put on a non stick mat. You can see what some versions of the mats look look here. If you don't have a non stick mat, you can line a baking tray with parchment paper. If you want to, you can use Mei Make's technique. (It's in Mei Make's video on how to make homemade Cheese-its.) You can even try making your own technique. 
  7. Once you have rolled out your dough ⅛ inch thick, you can use little cookie cutters to cut out different shapes. If you don't have cookie cutters, you can trim off the edges to make a big rectangle/square. Then make lots of rows of squares and put it on your non stick mat. 
  8. Bake for 14-20 minutes at 350 F. They should be crunchy and golden once they are baked. Make sure they don't burn. I hope you enjoy these Cheese-its!
